April  6, 2015

This week, to celebrate the launch of the Genius Recipes cookbook, we're taking a look back at a few recipes from some of the geniuses featured in the book.

Today, we celebrate Heidi Swanson, creator of 101 Cookbooks and author of Super Natural Every Day, who makes eating well glamorous yet attainable. Who else can take words like "multigrain" and "natural kitchen" and make them hunger-inducing? Whether it's with a recipe for a cookie or a simple soup, Heidi proves that with a tweak or two, anyone can have a healthy—and chic—bite.

Here are 5 beautiful and nourishing recipes from Heidi:

Are we limited to just one? Here's two, her farro salad with citrus dressing which I think was on her blog. But then there is her Golden Crusted Brussel Sprouts in Super Natural Cooking. And the proportions for lemonade in Food 2.0 are perfect if you use Meyer lemons.

I love every soup I've tried by Heidi -- but her chipotle lima bean, porcinin mushroom, and vegetarian split pea are my favourites

I love her New Year's Noodle soup.

My favorite recipe of Heidi's is her Lemony Chickpea Stir-Fry. I've adapted it a bit, taking out the zucchini and tofu and using a ton of kale. It's amazing with a fried egg on top.

My favorite is "a simple carrot soup." It is always delicious and everyone loves it (family and guests alike)

She is my favorite cookbook author! Her Weeknight Curry (from Super Natural Every Day) is absolute staple in our household, and a ton of her other recipes from her cookbooks and blog are on regular rotation. I can't wait for her next cookbook! (FYI it's coming out this fall and is inspired by her travels.)
