All week, Christopher Hirsheimer and Melissa Hamilton have been sharing recipes from Canal House Cooking, Volume 8: Pronto! Today, we're rounding them all up and giving away one last copy of the book.

This week, The Canal House's Christopher Hirsheimer and Melissa Hamilton taught us that Italian cooking is all about simplicity: They demanded that we let fresh ingredients speak for themselves. They introduced us to an addictive butter sauce that we'll be pouring over every vegetable we have. They proved to us that there can be a perfect balance between spicy and flavorful. And they boozed up our apricots. Now the only question we have left is this: Which dish do we make tonight? (How about all of them?)

All-time favorite Italian dish is an easy one for me: panna cotta. I've yet to try my hand at making it, but I know I'm a pro at eating it!

An unbelievably luscious porchetta in Umbria made with an entire pig and seasoned with the wild fennel and herbs found on the same farm the pig was raised on. All washed down with unlabeled young white wine and apricots with amaretti for desert. Flawless

Mmmm. Eggplant Parmagiano. Dipping, breading, and baking the eggplant slices before assembling the dish with tomatoes and cheese is worth the effort!

Salsa di Tonno ( tunny fish sauce) with spaghetti ala Elizabeth David from Italian Food. Simple and gratifying!

Risotto...easily. Its probably my signature dish and I've made dozens of varieties from a tried and true Milanese, to a wild mushroom to charred corn with portobellos (recipe on my profile ;)). Other than that, gnocchi arrabbiata, carbonara (without a drop of cream), and braised meats over creamy polenta. Asking me to choose is next to impossible, really.

It has to be Pasta Puttanesca. The truly authentic recipe makes incredible aromas come from the kitchen.
